Quick and Easy Parmesan Pasta and Chicken

Yummm!

Alright, here’s what you’ll need:

  • 3 or 4 chicken breasts
  • A box of Penne (or another kind if you prefer) pasta
  • 1 bag of raw spinach
  • Grated and shredded Parmesan
  • Milk (2% or whole milk is best, but anything works)

Step 1: Cook your chicken

Put a few tablespoons of oil in a pan with your chicken breasts on a low/medium heat. Cover with a lid. Cook either side until there is no pink left in the middle of your chicken. I like to season mine with oregano or a little bit of garlic salt during this process — it just depends on what flavor you’re going for. NOTE: It’s very important that you don’t over-cook your chicken in this step because it will be put back in the pan with the pasta later — right now you just want to get rid of the pink.

Step 2: Cut up the chicken while pasta is cooking

Follow the cooking instructions on the back of your pasta box — usually pasta takes about 8 minutes. While your pasta is cooking (carefully) remove the chicken from the pan and onto a cutting board. You’ll want to slice it up into nice bite-sized pieces — but not too small!

Step 3: Introduce the pasta and chicken to one another

So, by now you should have nice bite-size pieces of chicken and some perfectly cooked pasta. Yay! You’re one step closer to a delicious meal! Now, once you drain the pasta, put it back in the pan with your chicken and mix them together.

Step 4: Milk, Spinach, Cheese

With your stove on a low heat, pour about 1/3 cup of milk in with your pasta and chicken, mix it in. Then throw in about a cup of spinach, and as much cheese as you like! Now you’ll mix all of that together, cover with a lid, and let it sit until the spinach has cooked really well.

Step 5: Almost done!

Uncover your masterpiece and add another splash of milk for good measure. Stir everything in thoroughly, and top with some more grated Parmesan.
